TURKEY HOAGIE
Serves: 8


INGREDIENTS:

Meatballs    
2 Lbs    Ground Turkey (Lean)
 1/2    Onion, Medium
1-1/2 Tsp    Extra Virgin Olive Oil
3/4 Cup    Whole Wheat Bread Crumbs
1/4 Cup    Parsley, Minced
1    Egg, Large
1    Egg White, Large
1/2 Tsp    Ground Black Pepper
1 Tsp    Oregano, Dried
1/2 Tsp    Basil, Dried
1 Tsp    Garlic Powder
Sauce    
3 (15 Oz) Can    Crushed Tomatoes, No Salt
4    Garlic Cloves, Minced
 1/2    Onion, Medium
1-2     Chipotle Chilies, Canned, Rinsed And Drained
1 Tsp    Oregano, Dried
8    Whole Wheat Rolls

DIRECTIONS:

1.    Heat olive oil in skillet over medium to high heat and add chopped onion. Saute' until light brown.
2.    Remove from heat, set aside.
3.    In large bowl, combine ground turkey, bread crumbs, parsley, eggs, egg white, pepper, oregano, basil and garlic powder.
4.    Add onion and mix well.
5.    With wet hands, make 24 meatballs, about 1/4 cup each. Place on baking sheet and chill.
6.    In large pot, combine tomatoes, garlic, onion and oregano. Bring to simmer and cook 10 minutes.
7.    Finely chop one or two chipotle chilies and add to sauce. Simmer another 2 minutes.
8.    Remove meatballs from fridge and add one at a time to the sauce.
9.    Cook for another 10 minutes or until cooked through.
10.    Serve 3 meatballs per whole wheat roll
