TILAPIA WITH ALMONDS AND TOMATO LEMON SAUCE
Serves: 6
INGREDIENTS:
½ Cup Diamond Sliced Almonds
1 Small Onion, Sliced
1 Tbsp Berio Olive Oil
2 Garlic Cloves, Minced
1 (28-Oz) Can Hunts Diced Tomatoes with Basil, Drained
1 ½ Tbsp Honey
1 Tsp Grated Lemon Rind
3/4 Tsp Ground Cumin
1 ½ Tsp Fresh Lemon Juice
3/4 Tsp Salt
1/2 Tsp Ground Black Pepper
6 (4-Oz) Tilapia Fillets
1/8 Tsp Ground Red Pepper
Garnish: Fresh Cilantro Sprigs
DIRECTIONS:
1. Toast Almonds In Shallow Pan At 350° 5 To 6 Minutes. Set Aside.
2. In Skillet, Sauté Onion In Oil 10 Minutes. Add Garlic; Sauté 1 Minute.
3. Stir In Tomatoes And Next 3 Ingredients; Reduce Heat, And Simmer, Stirring Occasionally, 15 Minutes. Stir In Lemon Juice And 1/4 Tsp Each Of Salt And Black Pepper; Keep Warm.
4. Sprinkle Salmon Or Tilapia Fillets With Red Pepper, Remaining 1/2 Teaspoon Salt, And Remaining 1/4 Tsp Black Pepper. Place On A Lightly Greased Rack In A Broiler Pan.
5. Broil 6 Inches From Heat 10 Mins Or Until Fish Flakes With A Fork. Serve With Tomato Mixture; Sprinkle With Almonds. Garnish With Cilantro, If Desired.
